Mix It Up For Pancake Day
If you’re rushed off your feet come Tuesday morning, don’t panic – these recipes are super easy, ready in seconds and creative enough to keep even the most demanding little pancake fan happy!
Something a little fruity…
Serves 4
1 pack of disposable kebab skewers
Assorted fruit
1 pack of Abra-ca-Debora Diddy Dutch Pancakes
Jar of honey
Heat the Diddys Dutch Pancakes as to instructions on the packet. Slice the fruit and stick them on to the kebabs along with the fruit.
Drizzle with honey.
Something a little savoury…
Serves 6 Quesedillas
1 x pack of Abra-ca-Debora Original Pancakes
250g strong cheddar cheese, grated
4 tomatoes, roughly chopped
1 green chilli, finely chopped
1/2 bunch coriander, torn
Guacamole
Throw the cheese, tomatoes, chilli and coriander leaves into a bowl with some seasoning and mix well. Heat the pancakes in the oven for about 10 minutes, placing a layer of foil between each one.
Place a handful of cheese mix over one half of each pancake. Fold the pancakes in half to make 6 half-circles, press down and seal. Brush the tops with a little oil, and heat a pan (preferably a griddle if you have one). Place the pancakes in the pan and cook for a couple of minutes to crisp and golden. Brush the uncooked sides with oil, then flip over and fry for another couple of minutes.
Slice into quarters and serve with guacamole.
Something a little fancy…
1 pack of lollipop sticks
1 pack of Abra-ca-Debora Diddy Dutch Pancakes
2 large bars of chocolate
Sprinkles and chopped nuts for decoration
Melt the chocolate in the microwave, taking care not to burn it. Stick the lollipop sticks through the Diddys and dip them in the chocolate. Then dunk them in the sprinkles or nuts. Put the Diddys in the fridge to set.
